I’ve been cooking this afternoon! The meatball sandwich I created for lunch was a huge success. In fact I’ve genuinely surprised myself by how good it’s come out.

I didn’t use a recipe and just winged it. Simply throwing ingredients I like to eat at each other, hoping for the best.

This is an attempt to write down what I did while it’s still fresh in my mind.

Meatball Ingredients (makes 4 meatballs)

  • ~100g lean mince
  • a bit of cumin
  • a bit of paprika
  • a bit more of pepper
  • a shake of salt
  • a bit less of Cayenne pepper
  • a few glugs of Worcester sauce
  • a splash of tabasco sauce
  • a sprinkle of chilli flakes
  • a leaf or two of fresh basil

Mix everything, press with hands, roll into balls, stick in fridge until you’re almost ready to use them. The pepper was important. I used a lot of pepper compared to everything else!

Sauce Ingredients

  • About half a carton of Cirio Passata
  • A clove of garlic super finely chopped
  • Maybe half an onion
  • Lug of oil
  • A shake of hot chilli powder
  • A load of pepper
  • a few glugs of Worcester sauce
  • a few leaves of fresh basil

Add the garlic and onion to the chilli powder and oil along with the meatballs in a pan. Brown off the meatballs then add the tomato sauce. Add the other ingredients and reduce. Taste, season as necessary.

Method

  1. Make the meatballs
  2. Pan on hob with oil and chilli powder
  3. Add onions, garlic, meatballs until brown
  4. In go the other ingredients
  5. Reduce for maybe 10-15mins? Keep stirring and tasting
  6. Stick the grill on
  7. Spoon meatballs onto some bread / ciabatta / sub roll (I used Low GI bun and it was great).
  8. Mature Cheddar cheese on top. Under the grill until cheese has melted
  9. Spoon on as much sauce as you dare. Depends how messy you want to get
  10. Enjoy your damn sandwich.
