I bet we’ve all got that one meal we’ll eat time and time again the night before a big ride. For me, it’s a simple pasta dish that’s pretty healthy, easy to make, and easy to digest.

I don’t want to eat too much the night before and wake up feeling all lethargic with a massive food hangover the day of the ride. So pairing this with a carb-rich breakfast will see my my muscles well and truly loaded by the time I head out. The best way to successfully ‘carb-load’ is to do it gradually over two or three days.

This serves two:

  1. 200g Penne
  2. 250g cherry tomatoes, halved
  3. 2 cloves garlic
  4. 2 tbsp olive oil
  5. 1 tbsp balsamic vinegar
  6. 2 or 3 tsp pesto
  7. Salt and peper to taste

I cook the tomatoes in the oil until they start to go soft, then add the garlic and cook for a minute or so before adding the balsamic vinegar and seasoning the pan with some salt and pepper. Then I’ll cook it for another minute or so before taking the pan off the heat, mixing the sauce with cooked pasta and pesto, and finally applying to face.

Cherry tomatoes are miniature versions of traditional beefsteak tomatoes, but they are equally as nutritious. In addition to the 1.3 grams of protein, 1.8 grams of fiber and 20 milligrams of vitamin C in 1 cup of cherry tomatoes, you also get a healthy dose of other vitamins and minerals essential for good health.

It’s only about 460 calories per serving. Sometimes I’ll do myself a bit extra pasta if I think I need it, but it’s nice and filling and goes down an absolute treat!
