I bloody love a good sandwich! They’re just so versatile. Easy to cobble together, and equally great for post-ride recovery and pre-ride energy boost.

I haven’t had much spare time to write recently and needed some quick and relavent content to put up this weekend. That’s when my stomach started to rumble with a delicious idea…

So here’s what I had for lunch today:

Ingredients

  • Low GI Seeded Bread
  • 3 Slices Roast Chicken Breast
  • 1/2 Avocado
  • Few tsp Cottage Cheese
  • Hard Boiled Egg
  • Spinach
  • Rocket
  • French’s Mustard

That’s an almost perfect balance of nutrients in my book! Packed full of high-quality carbs, a good serving of protein, and a decent amount of healthy fat.

Here’s how I made it, should you feel the need to recreate it yourself.

Method

I started off by halving and squeezing the avocado into a bowl. I then added the cottage cheese, a little mustard, and the hard boiled egg. Then gave it a thorough mix and mash until it ended up like so:

Then I spread the mixture on both sides of the bread, and covered the bottom with the spinach and rocket leaves. On top of that I folded the chicken slices. Followed by a light dusting of black pepper.

You could enjoy it now as stands. Just look at the delicious bugger!

But I decided to go the extra mile today.

The Finish

Stick it on the griddle pan. Toasting bread on this thing is a whole new level of toast awesomeness. The bread stays soft and gorgeous inside but you get these wonderfully crunchy ridges for texture! Highly recommended.

Turkey Crown Sandwich With Egg Salsa and Cottage Cheese

A few less calories, a tiny bit less carbs, and a lot less fat in this delicious Turkey option.

Ingredients

  • Low GI Seeded Bread
  • 3 Slices Turkey Crown
  • Few tsp Cottage Cheese
  • Hard Boiled Egg
  • Spinach
  • Rocket
  • Chilli Flakes
  • tsp Salsa

kcal:352 / Carbs:29g / Protein:32g / Fat:11g

Method

Boil the egg. Peel and mix it in a bowl with around 30g of Cottage Cheese, some Salsa, and a dusting of chilli flakes. Spread the mixture on both sides of your bread, throw on some Spinach and Rocket. Fold on your turkey crown, close, slice, and devour!
